WEEKEND POST 69

Perhaps our most trustworthy harbinger of winter’s passing isn’t a who but a what. Loblolly pine pollen paints everything in NC with a coat of bright yellow dust. Mother Nature doing her spring thing. (Humans doing their sneeze thing.)

Taking a page from her coloring book, my lunches have been a rotating combination of yellows and greens. This one a curried spinach omelet roll with asparagus. Can’t wait to add snap peas to the mix!

It’s Easter tomorrow! I’m always thrown when the holiday comes early in March, and this year I feel particularly unprepared. A nice meal of some sort for the two of us, featuring more of the spring asparagus. Definitely a good wine, possibly rosé? And for dessert… is it too soon to bake another soft and fluffy AFC? What are your plans? Will you bake? Decorate and hide eggs? Sniff some lillies?
